Taco filling-
1 can of pinto beans
1 cup of TVP (textured vegetable protein)
1-2 tbsp tomato paste
3 tbsp taco seasoning
Vegan queso (you can make it yourself, I have a recipe video 😉)
Warmed tortillas
Any toppings of your choice (I chose lettuce and avocado on this version)
In a bowl, pour 1 cup of hot water on TVP. Stir and let sit for 5 to 10 minutes to absorb. Heat oil in large skillet. Add mash pinto beans. Stir and cook for one minute. Add rehydrated TVP. Stir and cook for one minute. Stir in tomato paste and taco seasoning. Cooked thoroughly for about five minutes. Start assembling your taco by placing your vegan queso directly on warm tortilla, then add your taco filling. Lastly, the rest of your toppings and enjoy.
