Vegan Fish Stick

As the back-to-school season approaches, meal planning can feel like a daunting task. Between homework, after-school activities, and all the hustle and bustle, having quick, nutritious, and delicious meal options is a lifesaver. That’s why I’m excited to share my vegan fish sticks recipe! These crispy, golden sticks are perfect for lunchboxes and weeknight dinners alike. They’re kid-approved, mom-loved, and packed with plant-based goodness. Let’s make your school year smoother and tastier with this easy recipe!

1 block extra-firm tofu, pressed and sliced

1/4 cup all purpose flour (gluten-free)

1/8 cup Low sodium soy sauce /vegan fish sauce

1/8 cup fresh lemon juice

1/4 cup unsweetened non-dairy milk

3/4 cups breadcrumbs

1/2 package seaweed snack sheets

1/4 teaspoon salt

1/4 Cajun seasoning

After your tofu is pressed (of the liquid is pressed out of it), slice it into sticks. Take out three bowls. First bowl - just add flour. Second bowl - add soy sauce/ vegan fish sauce (adds to fishy taste), lemon juice, non-dairy milk, and whisk together. In a food processor/blender, add breadcrumbs, seaweed (give it a fishy taste), sheets, salt, and Cajun seasoning, and pulse until it is completely mixed together then add that make sure to the third bowl. Now take your tofu sticks and place them in this order: dip in flour, dip in wet mixture, then dip in breadcrumb mixture and repeat for all of your tofu stick. Place your tofu sticks on a baking sheet or directly in your air fryer. Air fry tofu on 400° for 30 to 35 minutes. Once you let it cool, get you some hot sauce/ ketchup, then enjoy.
