8 ounces uncooked rice noodles

8 ounces stirfry veggies

2 tablespoons olive oil

1 pack extra firm, tofu, drained, and cut into cubes

1 cup like coconut milk

2 tablespoons red curry paste

3/4 teaspoon sea salt

Garnish (optional): lime, cilantro, scallions, peanuts, sesame seeds

Cook noodles in boiling water and follow. Packaged directions. Sauté stirfry veggies. (optional: remove veggies and pan, sear tofu) air fry tofu. Add coconut milk, curry paste, and salt to a pan, add veggies and noodle. stir until all is incorporated. Serve with lime, wedge, cilantro, scallions, peanuts, and sesame seeds if you want. Enjoy.
