Vegan Kebab

Marinade-
2 tablespoons olive oil
1 tablespoon balsamic vinegar
½ teaspoon sea salt
½ teaspoon black pepper
1 teaspoon garlic powder
½ teaspoon dried oregano
Veggies-
(You can choose any veggie or fruit to add to this kebab)
Mushrooms
Onions
Bell peppers of any colors
Zucchini and/or squash
Whisk all the marinade ingredients in a small bowl. Chop up your veggies and mix with the marinade. Set on the grill or in the oven (400°) on parchment paper lined baking sheet for about 30 minutes or until charred. Enjoy alone or with side items.
