Vegan Peanut Butter Ice Cream

1 can coconut milk

½ -¾ cup vegan whipping cream

¾ cup maple syrup

½ cup creamy, natural, unsalted peanut butter

1 teaspoon pure vanilla extract

½ teaspoon fine grain sea salt

Toppings: your choice

Blend all ingredients, (except the toppings). Once everything is smooth, pour mixture in a freezer safe container (loaf pan, silicone pan, etc.) and freeze until firm, about 2-3 hours or overnight. If the ice cream firms up overnight, let it sit at room temp for 15 minutes until it's scoop-able. Add toppings and enjoy.
