Vegan Lentil Sloppy Joe

2 tablespoons olive oil

1/2 onion, chopped finely

1 green bell pepper, chopped finely

2 1/2 cups of mushrooms, chopped

4 cloves of garlic, chopped

1 1/2 teaspoon sea salt

1 teaspoon chili powder

1/4 teaspoon crushed red pepper flakes

1 1/2 cups of cooked lentils

1 can of tomato sauce

2 tablespoons coconut sugar

Black pepper to taste

Sauté the onions and bell pepper until softened (5-7min) Add mushrooms in cook until softened (8-10 min). Add garlic, salt, chili powder, red pepper flakes, and cook for one minute. Pour in lentils, tomato sauce, and brown sugar. Add black pepper. Let simmer occasionally stirring for 10 minutes. The, place on bun, and enjoy.
