Vegan Breakfast Hash

There’s nothing like starting the day with a hearty breakfast, and my vegan breakfast hash is the perfect way to kick things off! Packed with tender potatoes, vibrant veggies, and loads of flavor, this dish is not only satisfying but also incredibly easy to whip up. Whether you're meal-prepping for the week or just need a quick, delicious breakfast, this hash will keep you fueled and energized all morning long. Let’s dive into how to make this simple and tasty vegan breakfast staple!

1 sweet potato, diced

1 cup diced zucchini

1/2 cup onion, red or white

1/2 a red bell pepper, diced

1 can chickpeas

1 tsp garlic powder

1 tsp chili powder

1/2 tsp cumin

1/2 tsp paprika

salt and pepper, to taste

avocado (optional)

salsa (optional)

handful of kale (optional)

handful of fresh chopped cilantro (optional)

1 cup sliced mushrooms (optional)

Add everything except the potatoes, avocado and salsa to a skillet and cook over medium-high heat (add a few splashes of water if it starts to stick to the pan) until the veggies are softened and nicely browned, about 6-7 minutes. Then, take those out and add your potatoes and sauté until they are cooked through and additional 6-7 minutes. Then, return veggies and chickpeas to the skillet. Stir until everything is thoroughly mixed. Top with avocado and salsa when serving. And enjoy.
