Tofu and Broccoli stir-fry with a spicy cashew sauce

Spicy cashew sauce
3/4 cup raw cashews
1/4 cup water
1/4 cup maple syrup
2 tablespoons soy sauce
2 tablespoons Sriracha
1 teaspoon ginger
Have garlic clove
1/8 teaspoon sea salt
Stirfry
1/4 cup vegetable broth
2 tablespoons soy sauce
1 tablespoon maple syrup
1 tablespoon cornstarch
2 tablespoons avocado oil
Tofu
3 cups broccoli
Quinoa or rice
In a medium bowl, add broth, soy sauce, maple syrup, and whisk in cornstarch until it dissolves. Set it aside. Air fry or bake your tofu cubes or slices. Cook a portion of quinoa or rice and follow instructions on packet. Next oil, your skillet and sauté your broccoli. Once broccoli is slightly browned add air fried tofu, then add stirfry sauce. Stir until liquid thickens. Next in a blender add all your sauce ingredients, and blend until smooth. Add stirfry to your plate of rice or quinoa and then top it off with the spicy cashew sauce and enjoy.
