Vegan Chickpea & Collard green soup

3 cups chickpeas, drained and rinsed
1 cup collards, frozen
8 sun-dried tomatoes, chopped
1/2 cup raw cashews
4 cups vegetable stock
1 lemon juiced
Fresh cilantro
Salt and pepper to taste
Add vegetable stock to a large pot at medium high heat. Add collards, and bring to a boil. Stir occasionally. After 1 minute, add chickpeas, and allow to simmer for 5 minutes. Add sun-dried tomatoes, cashews, and lemon juice, then sprinkle salt, and pepper. I cover with lid and simmer for 10 minutes. Allow soup to cool for 5 minutes. Garnish with cilantro. And enjoy.
