Roasted Carrot Hummus

If you’re looking for a simple yet flavorful snack or side dish, this roasted carrot and hummus combo is just the thing! 3 carrots (cut into pieces if you’re using a blender)

1 teaspoon - 1/4 cup of olive oil

1/2 a teaspoon sea salt

1 can of chickpeas, drained and rinsed

2 tablespoons lemon juice

1 garlic clove

Pinch of black pepper (optional)

Topped with pomegranate seeds

Roast the carrots after you rub oil and salt on them for about 30 minutes in the oven at 400°. Afterwords put everything in the food processor and blend until desired texture.
