Vegan Parmesan sautéed zucchini & creamy white beans

1 tablespoon extra-virgin olive oil

1 medium yellow onion sliced

4 medium zucchini, sliced

½ teaspoon garlic powder

½ teaspoon sea salt

¼ teaspoon black pepper

½ teaspoon paprika

¼ cup shredded vegan Parmesan cheese

In an oiled skillet, add onions and sauté until tender. Add spiced zucchini to the skillet and season with garlic powder, salt and pepper. Constantly stir and sauté until zucchini is tender as well. Once zucchini is tender, sprinkle paprika, and vegan Parmesan cheese and allow it to melt.

1 can of white beans, rinsed and drained

Sprinkle of garlic powder

Sprinkle of onion powder

Salt and pepper, to taste

Italian herbs or herb mix

1/8 cup tahini sauce

1-2 tablespoon vegan Worcestershire sauce

Take drained beans and place it in a small pot or skillet and add seasonings and sauces. Stir until completely combined on medium heat. Serve and enjoy.
