Chickpea Salad and Mango Chutney Sandwich

Mango chutney-
3 cups diced mango
1/2 cup finely diced red onion
1/3 cup golden raisins
1/3 cup coconut / brown sugar
5 tablespoons finely minced garlic
3 tablespoons finely minced ginger root
3 tablespoons white wine vinegar
1/4 teaspoon salt
1/8 teaspoon red pepper flakes
Chickpea salad-
1 can Chickpeas drained and rinsed
1/4 cup Sweet Relish
1/4 cup Purple Onion finely chopped
2 Tbs Cashew Mayo, Vegenaise or mayo of choice
2 1/2 tsp Yellow Mustard
1/2 tsp Sea Salt
1/2 tsp fresh Black Pepper
For chutney, place all ingredients in a sauce pan and let simmer on medium low for 30 minutes.
For chickpea salad, place all ingredients in a mixing bowl and mix in mash chickpeas at the same time.
Place on your choice of bread and add as many toppings as desired. Then enjoy!
