BBQ Jackfruit and Coleslaw Sandwich

Jackfruit bbq-
2 20-ounce cans young green jackfruit in water, drained
1/4 cup BBQ seasoning: use 2 Tbsp brown coconut sugar, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp chili powder
3/4 cup BBQ sauce
Coleslaw-
1 bag of coleslaw mix (green cabbage, purple cabbage, carrots)
½ cup vegan mayonnaise (cashew mayo for me)
2 tablespoons pickle relish
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
3 teaspoons pickled jalapeños (optional)
Sea salt and black pepper, to taste
Drain and rinse the jackfruit out of the can. Squeeze excess water out. Put in a bowl with the bbq seasoning and mix to cover all the pieces of jackfruit. Let in sit for 5 min so the flavors are absorbed. In a hot oiled skillet, sauté until it has a little crisp. Then, add bbq sauce and let it simmer for 5-10 min.
Put coleslaw mix in large bowl and add the rest of the ingredients. Mix well until all parts are covered in mixture.
Get a bun add jackfruit, then coleslaw and enjoy!
