Buffalo Chickpea Sandwich

Whether you're a seasoned vegan or just looking to try something new, this sandwich is a simple yet satisfying meal that fits seamlessly into a busy lifestyle. 1 tablespoon melted, vegan butter

4 tablespoons buffalo sauce

Pinch of cayenne pepper

Pinch of sea salt

2 teaspoons coconut sugar

2 teaspoons water/olive oil

1/2 onion, diced

3 cloves garlic, minced

1 can chickpeas, drained, and rinsed

Yogurt ranch sauce (I haft this recipe)-

1 1/2 cups vegan yogurt

1/4 cup nondairy milk

1 1/2 teaspoon apple cider vinegar

3 cloves garlic, minced

1/2 tablespoon fresh/ dried parsley

1 teaspoon dried dill

1 teaspoon dill seed

1 teaspoon onion powder

1/4 teaspoon paprika

1/4 teaspoon pepper

salt to taste

Combine melted, vegan butter, buffalo sauce, garlic powder, cayenne pepper, salt, and sugar in a bowl and whisk. Take drained and rinsed chickpeas in a bowl and mash, but just enough to have texture. Sauté onions until softened then add garlic and cook for an additional one minute. Add buffalo sauce and mash chickpeas to onions and let simmer for two minutes.

Necks the ranch sauce, mix all ingredients together in a bowl. Can also be used as a dressing. Add lettuce and tomato to a bun then add chickpea mixture, and lastly, ranch sauce. Enjoy.
