Lemony Arugula

Dressing-
3 tbsp lemon juice
2 tbsp dijon mustard
2 tbsp nutritional yeast
1 tbsp maple syrup
Arugula
Baby kale
Tomatoes
Cucumbers
Vegan feta
Chickpeas (w/ little salt, garlic powder, and onion powder)
Couscous
In a saucepan, sauté 1 1/3 cups dry couscous with 1/2 tbsp cooking oil over medium heat until couscous is lightly browned. Slowly add 1 3/4 cups boiling water and bring it to a boil. Add sprinkle of salt. Reduce heat to medium low and cover. Stir occasionally. Simmer for 12 minutes or until liquid is absorbed. Place all dressing ingredients in medium bowl and whisk together until smooth. In a large bowl, place arugula, baby kale, tomatoes, cucumbers, vegan feta, the cooked couscous, and chickpeas. Drizzle lemon dressing on top. And enjoy.
