Vegan Oat pancakes & Spelt pancakes

Oat banana pancakes-

1 cup gluten-free rolled oats

1/2 cup almond milk

2 tablespoons maple syrup

1 ripe banana

1 teaspoon vanilla

1 teaspoon baking powder

1/4 teaspoon salt

coconut oil, for cooking

maple syrup, topping

You are a choice of fruit or other pancake toppings

Spelt pancakes-

1 ½ cups spelt flour

1 ½ Tablespoons baking powder

1 ½ cups non-dairy milk

3 Tablespoons organic cane sugar

½ banana, mashed

⅛ teaspoon salt

coconut oil, for cooking

maple syrup, topping

You are a choice of fruit or other pancake toppings

Oat banana-

Put rolled oats in blender and break it down. Then, add all the other ingredients in a blender, almond milk, maple syrup, banana, vanilla, baking powder, salt. Blend until completely smooth. Spread oil in a large non-stick skillet or griddle over medium heat. Add batter and cook until edges are golden brown, flip the pancake and cook through thoroughly. Repeat until batter is all gone. Top with maple syrup and fruits. And enjoy.

Spelt pancakes-

Mix dry ingredients (spelt flour, baking powder, cane sugar, salt) in a large bowl. Add wet ingredients (milk, mashed banana), and let rise for about five minutes. Spread oil in a large non-stick skillet or griddle over medium heat. Pour the batter into the pan, and cook until you see the edges starting to turn golden brown. Flip pancakes and continue to cook until done. Repeat until batter is all gone. Top with maple syrup and fruits. And enjoy.
