Vegan Gluten-free Waffles

1 1/2 cups unsweetened vegan milk
2 teaspoons lemon juice
2 cups all-purpose gluten free flour
1 tablespoon baking powder
1/2 teaspoon sea salt
1 tablespoon coconut sugar or maple syrup
1/4 cup melted vegan butter
1/2 teaspoon vanilla extract
Combined your vegan milk, vanilla extract, and lemon juice in a small bowl and set aside for five minutes to make a vegan buttermilk. in a large bowl, add sifted, flour powder and salt. Next add sugar, melted butter, and buttermilk mixture. Stir until completely combined. Batter will get thick. preheat waffle, iron and brush on melted vegan butter for additional nonstick. Scoop batter onto waffle iron and close. Wait until the waffle iron stops steaming and open to see if waffle is completely cooked. Remove waffle and place on a baking sheet. Repeat the steps until all the batter is cooked. Top it with whatever you want and enjoy.
