Vegan Collard Greens

As part of our festive Christmas in July series, I’m thrilled to share a beloved holiday favorite with a summery twist: vegan collard greens. This dish brings the warmth and comfort of the holidays right to your summer table, offering a deliciously hearty and plant-based take on a classic. Whether you’re new to veganism or a seasoned pro, these collard greens are sure to become a staple in your kitchen. Ready to dive into some holiday cheer in the middle of summer? Let’s get cooking!

Bag of collard greens/ 2 bunches of collard greens, chopped

1/4 cup of Bragg seasoning (add more if needed)

1 can of petite diced tomatoes (no salt added)

1/2 onion, sliced

2 tablespoons taco seasoning

Salt and pepper, to taste

1- 2 cups water, for liquid

First, in large pot, sauté sliced onions. Add salt and pepper to taste. Once onions are tender, add collard greens, Bragg seasoning, tomatoes, taco seasoning, and water. Stir mixture occasionally. Bring to a boil, then change to medium low after one minute. Cook covered for about 40 minutes or until greens are very tender. And enjoy.
