Vegan Cajun White Bean Burgers
Back-to-school season is upon us, and that means busy weeknights and the need for quick, delicious meals. Enter my vegan Cajun white bean burger! This recipe is a game-changer for those hectic evenings when you want something hearty and flavorful but still healthy. Packed with plant-based goodness and a kick of Cajun spice, this burger is sure to be a family favorite. Let’s dive into this mouthwatering creation that’s perfect for any night of the week!
1 can white northern beans
1/2 cup TVP
1/4 cup canned tomatoes
1/4 cup Cajun seasoning
1 flax egg/ 1 egg replacer egg
Tahini sauce-
2 tablespoons tahini
1 tablespoon lemon juice
2 cloves garlic, minced
1/4 tsp salt
2 tablespoons hot water
Buns (whole wheat or gluten free)
Toppings of your choice
In a medium bowl rehydrate TVP with 1/2 cup of water. Once hydrated, add all of the burger ingredients to a food processor and mix to desired texture (once you see all the ingredients are mixed together, stop). Form into patties. And place on oiled skillet. Flip burger to make sure both sides are crispy. While that continues to cook, make tahini sauce. Take tahini sauce ingredients in a bowl and whisk until completely smooth. Take your bun and bean burger, along with sauce and your choice of toppings, and assemble your burger. And enjoy.
