Glazed Almond Cookie Ball

2 cups almond, raw
8–16 dates
1/4 cup raisins
1 scoop protein powder
1/2 cup shredded coconut
Coconut cream glaze-
1 cup coconut cream, (place in refrigerator night before for better results)
1 tsp vanilla extract
1/8 cup powdered sugar
Preheat oven to 257°. On a lined baking sheet with parchment paper, place almonds, on that baking sheet and roast them for 10 to 15 minutes. While almonds are roasting, place dates in small bowl and cover with warm water for 10 minutes. Drain dates completely. Add the almonds, dates, protein powder, raisins, and shredded coconut to a food processor and blend until it becomes a chunky mixture. Scoop out the almond mixture with a spoon and roll into a firm ball. Place the ball on a baking sheet or casserole dish. Repeat until the entire mixture becomes 11 to 13 balls. Place the baking sheet/casserole dish in the fridge for about 45 minutes until all the balls have firmed up. Next, take a large bowl and place the coconut cream, vanilla extract, and powdered sugar inside. Mix for about 5 to 10 minutes with an electrical mixer with beaters, or a whisk. Once completely combined, place in the fridge for an additional 5 to 10 minutes, until the texture you desire. Dip each ball into the glaze mixture. And enjoy.
