Vegan Peanut Butter Mug Cake

2 tbsp gluten-free all-purpose flour (you can also use regular all purpose flour)
2 tbsp peanut butter
2 tbsp unsweetened almond milk
1-2 tbsp pure maple syrup
1/4 teaspoon baking powder
1/2 teaspoon pure vanilla extract (optional)
Chocolate chips
Add all ingredients (except the chocolate chips) to an 8-ounce or larger microwave-safe mug. Use a fork/mini-whisk to stir together until combined.
Microwave on high until the cake has risen and springs back slightly when you poke it, 45-60 seconds. Add 15 second increments until fully cooked.
Top with chocolate chips and enjoy!
