Vegan Peanut Butter Cookie bar

Plus, who can resist the classic flavor of peanut butter in a soft, chewy bar? Let’s dive into this delicious recipe!

Bottoms Layer

1/3 cup creamy peanut butter

¼ cup melted coconut oil

¼ cup maple syrup

2 teaspoons vanilla extract

½ teaspoon sea salt

2½ cups almond flour

1 cup chocolate chips

Cacao Layer

1½ cups walnuts

2 tablespoons cocoa powder

¼ teaspoon sea salt

10 soft medjool dates

2 tablespoons water

Put all bottom layer ingredients (except almond flour and chocolate chips ) in a bowl and mix. Then add almond flour, then chocolate chips, and stir. Place mixture in a parchment lined casserole, pan and place in the freezer while you make top layer. Put all ingredients except dates and water and a food processor and pulse. After make sure is broken down add dates and water and make into a paste. Spoon that layer on top of the cold bottom layer and place in the freezer for 30 minutes. And serve when ready, then enjoy.
