Vegan Creamed Corn

This creamy, dreamy side dish is perfect for those warm July evenings when you’re craving a bit of holiday cheer. Made with simple, wholesome ingredients, this vegan creamed corn is not only dairy-free but also packed with the rich, comforting flavors you love. Whether you’re planning a Christmas in July celebration or just looking for a new favorite summer recipe, this dish is sure to be a hit.

Let’s dive into the kitchen and whip up some magic with this irresistible vegan creamed corn!

1 tablespoon vegan butter

2 cloves garlic,minced

1 tablespoon all purpose flour,(preferred gluten-free)

1 ¾ cups full-fat coconut milk

2 tablespoons nutritional yeast

½ teaspoon salt

½ teaspoon black pepper

3 cups corn kernels, (preferred frozen)

Melt vegan butter in a medium skillet over medium heat. Add the garlic and cook for about 30 seconds, then whisk in the flour to make a paste and cook for another 30 seconds, whisking continually. Add the coconut milk, nutritional yeast, salt, and pepper and whisk to combine. Stir in the corn kernels and continue to cook for 2 - 4 minutes. Serve hot and enjoy.
